Pita Cups with Grilled Shrimp, Corn, and
Lemongrass

(Serves 8)
12 Mini Pita Cups
2 T Olive Oil
3 T Lime Juice
1 Small Bunch Lemongrass, coarsely chopped
10 Medium Shrimp, peeled and deveined
1 Cup Fresh Corn
Salt and Pepper, to taste
To prepare the pita cups, split each in half
horizontally, Brush tops with olive oil and bake at 350 degrees
about 5 minutes until crisp.
In a large bowl mix the lime juice,
lemongrass, shrimp, corn, salt, and pepper. Heat a grill pan to
medium-high and cook mixture about 15 minutes. Let cool a few
minutes and then spoon into pita cups.
