Pear Waldorf Salad Dr. Nancy Berkoff serves 5

2 cups chopped ( not peeled) ripe pears
1 Tablespoon lemon juice
1 teaspoon sugar
6 ounces mayonnaise or low fat plain yogurt
1 cup finely minced celery
½ cup finely chopped walnuts ( optional)
Toss all ingredients together and mix until well coated. Allow to chill for at least 30 minutes before serving. Serve on a bed of shredded lettuce and garnish with raisins or chopped dates.
