Calcium Power Salad
serves 4

Salad:
- 3 cups fresh baby spinach
- 1 cup fresh romaine, chopped
- ½ cup shredded fresh kale or collard greens
- ½ cup chopped red bell pepper
- ¼ cup chopped yellow bell pepper
Dressing:
- 1 cup nonfat plain yogurt or silken tofu
- ¼ cup chopped green onions
- ¼ cup chopped fresh parsley or cilantro
- 1 clove garlic, minced
- ½ cup cucumber, peeled, seeded and minced
Toss all salad ingredients in a medium bowl and set aside to
chill
Place all dressing ingredients in a blender and process until
smooth.
To serve, place salad on four chilled salad plates, top with
dressing and serve.
May be garnished with additional chopped bell pepper.
