Calcium Power Salad
serves 4

Salad:

  • 3 cups fresh baby spinach
  • 1 cup fresh romaine, chopped
  • ½ cup shredded fresh kale or collard greens
  • ½ cup chopped red bell pepper
  • ¼ cup chopped yellow bell pepper

Dressing:

  • 1 cup nonfat plain yogurt or silken tofu
  • ¼ cup chopped green onions
  • ¼ cup chopped fresh parsley or cilantro
  • 1 clove garlic, minced
  • ½ cup cucumber, peeled, seeded and minced

Toss all salad ingredients in a medium bowl and set aside to chill

Place all dressing ingredients in a blender and process until smooth.

To serve, place salad on four chilled salad plates, top with dressing and serve.

May be garnished with additional chopped bell pepper.
