Penne with Vodka Sauce (serves 8) By

4-6 cups of penne cooked al dente
2 tablespoons of butter
4 shallots, minced
4 garlic cloves, minced
2 cups chicken broth
2 cups vodka
1 cup light cream
2 teaspoons dried parsley
2 teaspoons dried basil
2 cans (64 ounces) of plain tomato sauce
Heat the butter in a pan. As soon as it has melted, add the garlic
and shallots. Cook about 5 minutes. Add the vodka. (Careful as may
flame.) Stir constantly and cook about another 5 minutes. Add the
chicken broth and the tomato sauce. Bring to a boil and then simmer
about 10 minutes.
Serve over the pasta. You can also serve warm bread on the side.
