Penne with Vodka Sauce (serves 8)

  • 4-6 cups of penne cooked al dente
  • 2 tablespoons of butter
  • 4 shallots, minced
  • 4 garlic cloves, minced
  • 2 cups chicken broth
  • 2 cups vodka
  • 1 cup light cream
  • 2 teaspoons dried parsley
  • 2 teaspoons dried basil
  • 2 cans (64 ounces) of plain tomato sauce

Heat the butter in a pan. As soon as it has melted, add the garlic and shallots. Cook about 5 minutes. Add the vodka. (Careful as may flame.) Stir constantly and cook about another 5 minutes. Add the chicken broth and the tomato sauce. Bring to a boil and then simmer about 10 minutes.

Serve over the pasta. You can also serve warm bread on the side.
