Individual Chocolate Pots de Crème
(Serves 8)

Allow time for these to chill.

  • 1 and 1/3 cups 2% milk, brought to a boil
  • 2 eggs
  • 8 tablespoons sugar
  • 2 cups of finest-quality, semi-sweet chocolate chips
  • 4 tablespoons of an orange-flavored liquor such as Grande Marnier
  • 2 cups of whipping cream
  • candied ginger, for garnish

COMBINE the eggs, chocolate, liquor, and 4 tablespoons of sugar in a blender. Once the chocolate is a fine consistency, add the milk. It will melt the chocolate and cook the other ingredients.

POUR into small bowls or cups and refrigerate.

BEAT the whipping cream with 4 tablespoons of sugar. Place a dollop on each serving when ready. Sprinkle each with a few bits of candied ginger.
