Spicy Dried Fruit Compote

What a way to get your vitamins and minerals! Stir into yogurt or hot cereal, eat it on its own or serve over sorbet

  • 1 cup dried plums (prunes)
  • ½ cup dried mixed fruit
  • 2 Tablespoons sugar
  • ¼ teaspoon ground allspice
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • 2 cups water

In a 1-quart microwave safe bowl, combine all ingredients and stir to mix. Cover and vent. Microwave on HIGH for 3 minutes, or until boiling. Remove from microwave and allow to cool for at least 30 minutes before serving
