Basmati Rice with Green Tea and Curry

by Nancy Berkoff, RD, EdD, CCE
serves 4-6

You don’t have to just drink tea to enjoy it, you can cook with it too!

  • 8 ounces uncooked basmati rice, rinsed

  • 2 cups water

  • 1 green tea bag (or 2 teaspoons loose green tea)

  • 2 ounces raisins

  • 1/2 ounce butter

  • 1 ounce curry powder

  • ¾ teaspoon salt

Place rice in bowl and allow to soak in 2 cups water for 30 minutes. In a small bowl, prepare green tea with 6 ounces boiling water. Remove tea bag (or tealeaves) and add raisins. Allow to stand for 10 minutes and drain. Place butter in a small sauté pan and melt. Stir in curry and stir. Add rice and rice water and raisins and salt. Bring to a fast boil, stirring. Lower heat, cover and allow to simmer for 10 minutes or until all the water is absorbed and the rice is soft. Allow to stand, removed from heat, for 5 minutes before serving.
