Roasted Veggies

Ingredients:

  • 6 Green, Yellow, or Red Peppers
  • 3 Vidalia Onions
  • 6 Yukon Gold Potatoes
  • 4 Zucchinis
  • 4T Olive Oil

Having a mix of colorful peppers will make for an exciting presentation. To prepare the grilled veggies, rough cut the peppers, Vidalia onions, Yukon Gold potatoes, and zucchinis. Toss with olive oil and place in a grilling basket or foil packet. Cook on the grill for about 30-40 minutes until tender. It is best to add the veggies on the grill after the chicken so they finish at the same time.
