BOCAź Sausage, Barley and Bean Soup

  • pkg. (10 oz.) frozen BOCA Meatless Smoked Sausage

  • 1 qt. (4 cups) water

  • 1 can (15-1/2 oz.) great Northern beans, drained, rinsed

  • 1 can (14-1/2 oz.) stewed tomatoes

  • 1 medium onion, chopped

  • 2 stalks celery, sliced (about 1/2 cup)

  • 2 medium carrots, sliced (about 1/2 cup)

  • 1/2 cup quick-cooking barley

  • 2 tsp. Worcestershire sauce

  • 1/2 tsp. dried basil leaves

  • Hot pepper sauce (optional)

 

CUT sausage into 1/4-inch-thick slices.

PLACE sausage and all remaining ingredients except hot pepper sauce in Dutch oven or large saucepan. Bring to boil; cover.

REDUCE heat to medium-low; simmer 15 minutes or until vegetables are tender. Season to taste with hot pepper sauce.
