    Stir-frying requires cooking at a very high, consistent temperature, so though you can prepare it on any basic home cooktop, gas ranges work best as the heat is easily controlled.

    The correct pan to use for optimal results is a wok. A wok is a heavy pan that has sloped sides and a rounded or flat bottom. The wok should be large enough to cook all ingredients without crowding.

    A flat bamboo spatula is good choice for stirring the food. A flat spatula fork, preferably heat-resistant, can be used. Some cooks use two utensils to flip and lift food as it is being cooked. A hot pad will come in handy when working with such a hot pan.
