Gifts in a Jar - Coconut Oatmeal Raisin Cookie
Recipe
Dry mixes you make yourself are not only economical but make
wonderful gifts any time of the year. Gifts in a jar are perfect for
having on hand to mix up yourself but especially for the holidays.
Coconut Oatmeal Mix Recipe
Ingredients:
1 1/4 cups all purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup quick oats
1 cup raisins
1/2 cup flaked coconut
1/2 cup firmly packed brown sugar
1/2 cup granulated sugar
Directions:
Mix together the flour, baking powder and salt. Mix well. Put this
mix into the bottom of a wide mouth canning jar.
Next layer the remaining ingredients in the jar in whatever order
you like.
Put on the lid, add a bow or colorful jar topper and you are ready
to go. For at home use put everything together in quart size Ziploc
baggies.
Yield: about 4 cups cookie mix
Directions for baking:
Preheat oven to 350 degrees. Pour cookie mix into a large bowl and
stir everything until the mix is well blended. Next mix 1/3 cup
vegetable oil and 2 eggs in small bowl. Beat until well blended. Add oil
mixture to dry ingredients; stir until a soft dough forms.
Drop s rounded teaspoon or two of dough onto a greased baking sheet.
Place cookies about 2 inches apart. Bake 8-10 minutes or until bottoms
are lightly browned. Remove from cookie sheet, allow to cool.
Yield: 4 dozen cookies
