Peach & Almond Jam to Can

Make this delicious peach jam, with a hint of almond, any time of year. It is perfect accompaniment to holiday dishes and makes a lovely gift. It's also wonderful as a glaze for ham.

Ingredients:

  •  4 Cups peach chunks - (about 6 peaches)
  •  1 Cup sugar
  •  1 Tablespoon almond extract

Directions:

  1. Put all ingredients into a heavy saucepan. Stir continuously while slowly bringing mixture to a boil. Reduce heat and simmer until thick, about 10 minutes.
  2. Ladle into decorative jelly jars and seal. Keeps 3 months in the refrigerator unprocessed.

Yield: 3 - 4 half-pints
