Green Tomato Relish - Canning Recipe

Green tomato relish is a wonderful way to use up those green tomatoes that are going to go to waste when that first frost hits. It is delicious on hotdogs and hamburgers. This green tomato relish recipe is chock full of summertime goodness. It will be your family's favorite after they taste the first bite.
 

Ingredients:

  • 8 qts. green tomatoes
  • 6 onions
  • 3 red peppers
  • 3 lb. brown sugar
  • 1 qt. vinegar
  • 1/4 c. salt
  • 4 jalapeño peppers, chopped
  • 2 Tablespoons chopped cilantro
  • 1 teaspoon ground cumin (optional)

Spices in a bag:

  • 1 tsp. cloves
  • 1 tbsp. cinnamon
  • (Simply tie the spices in cheesecloth to make a spice bag)

Directions:

1. Chop the tomatoes, peppers and onions. Remember to wear gloves when chopping hot peppers and do NOT touch your eyes.

2. Put in a large pot and add the brown sugar, vinegar, salt and spice bag. Bring to a boil. Turn down heat. Simmer until thickened. Relish will turn darker.

3. Using a wide mouthed funnel, pack into sterile pint or half-pint jars leaving 1/2" of headroom. Remove air bubbles, screw on lids and process for 15 minutes in a boiling water bath.
