Characteristics: Unlike most vegetables,
brussels sprouts like to mature in cool weather. They look like
miniature cabbages growing from tall stalks.
Planting: Fertilize the soil before planting.
Plant 11/2 to 2 feet apart in rows about 21/2 feet apart.
Care: Fertilize every two weeks. Water
frequently. Mulch to keep the soil consistently moist.
Harvest: Pick when they are about 1 inch
in diameter.

Cabbage
Characteristics: Cabbage
thrives in cool weather area so makes a great alternative for those
areas that have short growing seasons.
Planting: Start seeds indoors
about 6-8 weeks before season. Plant seedlings as soon as the soil
can be worked. Plant seeds about 2 feet apart in rows 2 feet apart.
Care: Needs rich, organic
soil. Mulch to keep soil consistently moist.
Harvest: Harvest before
the heads mature. Twist the heads off or cut them with a sharp knife.

Carrot
Characteristics: Carrots resist cold, grow
easily and take up very little space.
Planting: Need very loose soil. Mix with
sand to make harvesting easier. Plant as soon as you can work the
soil. Uniform moisture after sowing is critical. Plant seeds 2-3
inches apart in rows 1-2 feet apart.
Care: Weed meticulously to keep the root
healthy.
Harvest: Pick as soon as they are large
enough to eat.

Cauliflower
Characteristics: Some varieties of cauliflower
need to be carefully protected from sun.
Planting: Start seeds indoors 6-8 weeks
before season. Seedlings can be transplanted 2-4 weeks before the
frost-free date but you must protect the plant if danger of frost
threatens. Plant seedlings 2 feet apart in rows 3-4 feet apart.
Care: Need cool, fertile, moist soil to
do well. Water frequently. Mulch to keep soil consistently moist.
Fertilize with 10-10-10 every two weeks.
Harvest: When the curds are large, cut
them off at the base.
