Egg Recipes - Deviled Eggs & Egg Salad Sandwiches

Deviled Eggs

  • 6 hard-cooked eggs
  • 2 tablespoons mayonnaise
  • 3/4 teaspoon prepared mustard
  • 1/2 teaspoon your favorite seasoning blend
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Instructions.

Peel the hard boiled eggs. Now cut the eggs in half lengthwise. Scoop out the yolks and place in a bowl. Set whites aside on a plate.

Next mash the yolks with a fork. Stir in the mayonnaise and seasonings. Blend well. Using a spoon or a pastry tube refill the hole in the whites. Use about 1 tablespoon of yolk mix for each egg half. Keep refrigerated. Sprinkle with paprika for color.

Egg Salad Sandwiches

  • 6 hard boiled eggs
  • chopped onion or chopped celery
  • mayonnaise
  • mustard
  • bread

Peel and chop the hard boiled eggs. Add just enough mayonnaise to mix the eggs together well. Add a spoonful at a time until you have the eggs as moist and mixed as you like them. Now add 1 teaspoon mustard. Add some finely chopped onion or celery - about 1 Tablespoon or so. Spread the egg salad on bread. We like to toast our bread when eating egg salad sandwiches.
