Probiotics…sounds like something from a laboratory or a sci-fi movie,
but actually it’s one of the hottest topics circulating the health and
diet community right now. As I write about diet related topics I often
receive nutritional information in my e-mail in box, and after I kept
seeing the word probiotics popping up, I decided it was about time to
feature it in Eating Well on a Budget.

Spinach Pesto tastes great when served as a topping
for
Bruschetta (toasted slices of Italian bread) or pasta and can also
be smeared as a flavor booster over a piece of grilled chicken or fish.

My friend Pam shared her special cabbage casserole recipe. Pam is
from the mountains of Virginia where my extended family lives. I always
looked forward to visiting and getting to play with Pam. Forty-five
years later we are still friends. We don’t get out and swing on the
grapevines now (though we should), but we do exchange cards and recipes.
That’s a sure way to get the best recipes - from your favorite people.

Most of us who love canning and preserving also enjoy making as much of
our products as we can. You save money, it's fun and easy and you know
what is in there. That is why we are adding dry mixes and fun gifts in a
jar type recipes to the canning and preserving site. It's all about
making and preserving quality foods for our families.

Bunuelos are a well-loved sweet pastry in Mexico, especially around
Christmas, or any other holiday for that matter. While you'll find
variations from other countries, the Mexican version is usually noted
for its addition of anise.

When you think of the South, you probably think of pecan pies. With good
reason. There are lots of pecan trees in the South, and Southerners love
sweets.

Making your own mixes is a natural step for those of us who can and
preserve our own foods. But unlike canning or freezing, which require
special equipment such as canners or freezers, these recipes require
very little and can be stored anywhere.
